Japanese Organic Green Tea
Satsuma-Cha Biyori

The Japanese green tea served at AYANOMA, “Satsuma-Cha Biyori(さつま茶 日和),” is a high-quality deep-steamed sencha made from tea leaves grown in Satsuma, Kagoshima, in Japan’s southwestern Kyushu region.

This farm, which has been cultivating tea since the 1960s, is guided by the philosophy of creating tea that is kind to both people and nature. It avoids the use of chemical fertilizers and pesticides entirely, focusing instead on drawing out the natural strength of the environment. Pesticide-free cultivation began in 1993, followed by full-scale organic farming in 2002, meeting various Japanese safety certification standards.

“Satsuma-Cha Biyori” is an organic sencha made with care and intention―not only for people, but for all living things and nature itself. It is crafted from carefully selected, high-quality leaves harvested during the first flush of spring.

Using a deep-steaming method to soften bitterness and astringency, the tea produces a vivid, rich green color when brewed. On the palate, it offers a smooth, full-bodied flavor.

The finely cut leaves are another distinctive feature, making it well-suited for cold brewing as well. When prepared with cold water, it reveals a clean, gentle sweetness―offering a different expression of flavor that can be enjoyed depending on the season or mood. 

At AYANOMA, this sencha is served in beautiful yunomi cups made from Kutani ware(Known as Japan KUTANI), a traditional Japanese craft.
